- 1/4 cup powdered sugar

- Green food coloring (optional)
- 1 package (about 9 oz) chocolate wafer cookies
- Chocolate shavings or chips, for garnish
- Fresh mint leaves, for garnish
Instructions
- In a large bowl, beat the heavy cream, powdered sugar, and mint extract until stiff peaks form. Add green food coloring if desired, and mix until uniform.
- On a serving plate, spread a thin layer of mint cream. Top with a layer of chocolate wafer cookies. Repeat the layers, ending with a layer of cream.
- Cover and refrigerate for at least 4 hours, or overnight, until the cookies have softened.
- Before serving, garnish with chocolate shavings and fresh mint leaves.
Notes
- For a stronger mint flavor, adjust the amount of mint extract to taste.
- The cake can be made up to 2 days in advance and stored in the refrigerator.
