Description

  • Green food coloring (optional)
  • 1 package (about 9 oz) chocolate wafer cookies
  • Chocolate shavings or chips, for garnish
  • Fresh mint leaves, for garnish

Instructions

  1. In a large bowl, beat the heavy cream, powdered sugar, and mint extract until stiff peaks form. Add green food coloring if desired, and mix until uniform.
  2. On a serving plate, spread a thin layer of mint cream. Top with a layer of chocolate wafer cookies. Repeat the layers, ending with a layer of cream.
  3. Cover and refrigerate for at least 4 hours, or overnight, until the cookies have softened.
  4. Before serving, garnish with chocolate shavings and fresh mint leaves.
