- 2 cups shredded sharp cheddar cheese
- 1/2 teaspoon smoked paprika (optional)
- Extra shredded cheddar and chopped chives, for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Arrange broccoli florets on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 15-20 minutes.
- In a large pot, melt butter over medium heat. Sauté onions until softened, then add garlic and cook until fragrant.
- Add broth and roasted broccoli to the pot. Bring to a boil, then simmer for 10 minutes.
- Blend soup until smooth or leave slightly chunky.
- Stir in cream and cheddar over low heat until melted. Serve topped with extra cheddar and chives.
